A staple in german meals, potato salad is often served as a part of the traditional side salad in restaurants. Usually, a side salad in Germany consists of a leafy butter lettuce base with a variety of quadrant toppings, one of which often includes potato salad. Alternatively, this dish pairs greatly with a barbeque or sandwich lunch in the summer.
Ingredients:
5 Yellow Potatoes
1 Cup Vegetable Broth
1 Yellow Onion
1-2tsp Mustard
Chives
Salt
Pepper
1Tbs Apple Vinegar
1Tbs Rapeseed Oil
Directions:
Boil Potatoes for 15-20 minutes until cooked through but not soft. Let cool, peel, and slice.
In a bowl, slices potatoes, hot broth, and finely chopped onion. Mix everything together.
Add mustard, salt, pepper, apple vinegar, and rapeseed oil to taste starting with the amounts outlines above.
Sprinkle cut chives over salad and serve.
